Summers were hot on the Hart Ranch so we looked for a variety of ways to cool down. First and foremost, it was a dip in the spring-fed San Marcos River running right through our backyard. Often when we returned from our swim, Momma would have something cool and refreshing for us to eat. This was always a favorite of mine since it has avocado in it. It's a perfect refreshing salad to bring to that summer BBQ.

Ingredients

1 large tomato, chunked

2 avocados, peeled and chunked
Dressing
-
1 medium clove of garlic
-
1 medium red jalapeno pepper, seeded and coarsely chopped

2 tablespoons chopped cilantro
-
Finely grated zest of 1 lime
-
2 tablespoons of lime juice

3 tablespoons of canola oil
-
½ teaspoon Hart Ranch Seasoning
Directions
Make the Dressing First
Combine the garlic, jalapeno and cilantro on a cutting board and chop until very fine.
Scrape into a bowl and whisk in the lime zest, lime juice, oil and Hart Ranch Seasoning.
Add tomato and avocados to the dressing and mix.
Let marinate for about 10 minutes before serving.
